The Twelve Hotel opens in Bearna Village

Hotel openings are hardly newsworthy events in today's Ireland. But when a luxury boutique hotel opened in Bearna village outside of Galway we took notice.

The Twelve Hotel resurrects a once proud tradition, following in the footsteps of the Twelve Pins, a fine hotel for its day in the 1800's. Elements have changed – the name, the physical structure of the building – and elements have stayed the same, including the fine tradition of hospitality, the wonderful site, the goodwill. Passion for food and wine seems to be one of the prevailing themes of the Twelve, thanks in large part to Galway man Fergus O’Halloran, who oversees the Twelve's operation. O'Hallaran's personal passion for food and wine was honed as Canada's top Sommelier. Fergus and his talented staff, draw upon vast collective experience in the hotel industry worldwide, channeling their best ideas, favorite experiences, and demanding standards into the creative culinary magic that is The Twelve.

Drawing upon his background as Sommelier, O’Halloran goal for the Twelve Hotel was to create one of the most exciting and best wine collections in Ireland. And so he has. Wine, wine, wine... practically around every corner, displayed in specially designed cabinets, on shelves, with bottles of exquisite vintages seen as artwork themselves. The beautifully designed Champagne Bar serves up to twenty different wines and bubbles by the glass along with freshly shucked oysters.

If you're a foodie, then the Twelve is the place for you. Its superb restaurant, West highlights a menu based on healthy and organic food, from the region's finest produce. Take your seat at West's Chef's Table, located in the heart of the kitchen right beside the Chef, where a personalized menu is prepared with specially selected wines for each course. On a more casual note, The Pins Bar and Lounge is a great place to enjoy fine coffees, interesting teas, breads 'just out of the oven' from the Twelve's on-site bakery, and light meals showcasing the finest of West Coast produce.
